Ingredients
Mustard Bacon BBQ Sauce
4ozbaconchopped
1/2cupchopped onion
3/4cupyellow mustard
1/2cuphoney
1/4cuplight brown sugar
1/4cupapple cider vinegar
2tablespoonsketchup
1tablespoonWorcestershire sauce
1teaspoongarlic powder
Salt and pepperto taste
Pork Chops:
1tablespoonlight brown sugar
1tablespoontablespoon smoked paprika
1/2tablespoonchili powder
1teaspoongarlic powder
1teaspoonground cumin
1teaspoonsalt
1/4teaspoonground mustard
1/4teaspoonpepper
2poundsboneless pork chops
Instructions
Cook the bacon in a medium saucepan until almost crisp. If necessary, drain the grease, leaving about 1 tablespoon in the pan. Add the onions and cook, stirring often, until softened.

Add the mustard, honey, brown sugar, vinegar, ketchup, Worcestershire sauce, and garlic powder. Bring to a light boil and let it simmer until slightly thickened, about 10 minutes. Taste, and season with salt and pepper as needed. (The sauce will thicken upon standing. You can use it right away, but I like to make it earlier to give it time to set up.)
3/4 cup yellow mustard, 1/2 cup honey, 1/4 cup light brown sugar, 1/4 cup apple cider vinegar, 2 tablespoons ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon garlic powder, Salt and pepper
In a small bowl, combine the brown sugar, smoked paprika, chili powder, garlic powder, cumin, salt, mustard, and pepper.
Heat a grill to medium-high heat. Once hot, add the pork chops and cook, turning once, until they reach an internal temperature of 140ºF, about 8-12 minutes total, depending on the size of your pork chops.
Remove from the grill and let the pork chops sit for 5 minutes before serving. (They will come to temperature at 145ºF during the rest time.)
