Warm up with this easy Slow Cooker Chicken Enchilada Soup, filled with tender chicken, beans, tomatoes, and corn. It’s super easy and perfect for cozy nights!
In a slow cooker, combine the chicken broth, black beans, diced tomatoes, enchilada sauce, onion, bell pepper, cilantro, and garlic.

Season with the cumin, chili powder, and salt. Mix to combine.

Nestle the chicken breasts into the mixture in the slow cooker. Put the lid on and cook on low until the chicken is cooked through, about 3 hours.

Once the chicken is done, remove it to a cutting board to cool enough to handle.
While the chicken is cooling, add both the pepper jack cheese and the cheddar cheese and stir until they are melted.
