Gooey chocolate is sandwiched between two layers of oatmeal cookies in these decadent Oatmeal Fudge Bars. They are rich and delicious, and perfect for pot lucks or dessert time.
Preheat the oven to 350ºF. Line a 9x13-inch baking dish with parchment paper or spray with nonstick cooking spray.
In the bowl of a stand mixer, (or a large bowl if making by hand), combine the brown sugar and butter and beat until light and fluffy. Add the eggs and beat until combined. Mix in the vanilla.
2 cups packed brown sugar, 1 cup butter, 2 eggs, 1 teaspoon vanilla extract
In a bowl, whisk together the oats, flour, baking soda, and salt.
Add the dry ingredients to the wet ingredients and mix until combined.
Take about 2/3 of the oat mixture and press into the bottom of the prepared pan.
In a saucepan, combine the sweetened condensed milk, chocolate chips, and butter. Place over medium-low heat and cook, stirring often, until the chocolate is melted and the mixture is smooth. Remove from the heat and stir in the vanilla and salt.
1 (14-oz) can sweetened condensed milk, 12 oz semi-sweet chocolate chips, 2 tablespoons butter, 1 teaspoon vanilla, 1/2 teaspoon salt
Spread the chocolate mixture over the oat mixture in the pan, spreading as evenly as possible.
Take the remaining oat mixture and drop it by teaspoonfuls over the top of the chocolate mixture.
Bake in the preheated oven until golden brown, about 25 minutes.
Cool completely before cutting into bars.
