Ingredients
Dressing:
1/2cupolive oil
1/4cupred wine vinegar
3tablespoonsfresh lime juice
1clovegarlicminced
1 1/2teaspoonsground cumin
1 1/2teaspoonschili powder
1teaspoonsmoked paprika
Salt and pepperto taste
Salad:
1(15 oz) canblack beansdrained and rinsed
1(15 oz) cankidney beansdrained and rinsed
1(15 oz) cancannellini beansdrained and rinsed
1bell pepperchopped
1cupfrozen cornthawed
1/2cupdiced red onion
1/2cupchopped cilantro
1jalapeñodiced (seeds and ribs removed for less heat)
Instructions
Combine the olive oil, vinegar, lime juice, garlic, cumin, chili powder, paprika, salt, and pepper in a jar with a tight fitting lid. Tighten the lid and shake vigorously until combined.

In a large bowl, combine the beans, bell pepper, corn, red onion, cilantro, and jalapeño. Add as much of the dressing as desired, and stir to coat.

Serve right away, or refrigerate until needed.
