Ingredients
Sauce:
1/2cupmayonnaise
2tablespoonsgochujang sauceuse less for less spice
1tablespoonlemon juice
1teaspoonsesame oil
1/2teaspoonsoy sauce
1/4teaspoonsalt
1/4teaspoongarlic powder
Beef:
1poundground beef
3clovesgarlicminced
3tablespoonslight brown sugar
3tablespoonslow-sodium soy sauce
1tablespoonsesame oil
1teaspoonfresh minced ginger
1teaspooncrushed red pepper flakes
Salt and pepperto taste
Bowls:
2cupsprepared rice
Sliced cucumbers
Carrotscut into matchsticks
Sliced green onions
Toasted sesame seeds
Instructions
In a small bowl, combine all of the sauce ingredients. Use a whisk to mix until combined. Refrigerate until needed.
In a skillet over medium-high heat, cook the ground beef until it is browned and crumbled. Add in the garlic and cook an additional 30 seconds.
1 pound ground beef, 3 cloves garlic
Add the brown sugar, soy sauce, sesame oil, ginger, and red pepper flakes and stir to combine. Let this simmer for a few minutes, then taste and add salt and pepper, if needed.

To prepare the bowls, divide the rice between 4 bowls. Top with the beef, then any desired toppings. Drizzle with the sauce.
