Ingredients
2poundsboneless pork chopsat least 1” thick
1teaspoonsalt
1/2teaspoonpepper
2tablespoonsolive oil
2tablespoonsbutter
2tablespoonsflour
2clovesgarlicminced
2tablespoonsDijon mustard
2tablespoonshoney
1cupchicken broth
1cupheavy cream
1teaspoonfresh thyme
1/2teaspoonsmoked paprika
Instructions
Take the pork chops out of the refrigerator 30 minutes before starting. Pat dry with paper towels, then season both sides with the salt and pepper.
Heat the olive oil over medium-high heat in a large skillet. Cook the pork chops about 5-6 minutes per side, or until golden brown and cooked through. Remove to a plate and cover with foil to keep warm.

Turn the heat down to medium and add the butter. Once melted, whisk in the flour and cook for two minutes. Stir in the garlic and cook for another 30 seconds.
Add the mustard and honey, and once incorporated, slowly add the chicken broth and the cream. Season with the thyme and paprika.

Cook until slightly thickened. Add the pork chops back into the sauce to coat. Serve warm.
