Season the pork generously with salt and pepper. Let it sit while you prepare the rest of the ingredients.
In a bowl, whisk together the brown sugar, soy sauce, water, garlic, smoked paprika, and cayenne pepper.
Heat the oil in a large skillet over medium high heat. Add the pork chops to the hot oil and cook, turning once, until they are cooked to 140ºF. This should take about 3-4 minutes per side. Remove to a plate and cover with foil to keep warm.
Reduce the heat slightly, and add butter. When melted, add the glaze ingredients. Bring to a boil and cook until slightly thickened.
Return the pork to the skillet and coat with the sauce. Continue to cook for another few minutes, until the pork is 145ºF.
Serve topped with any remaining glaze in the skillet.
