Instructions
Preheat the oven to 425ºF. Line a baking sheet with foil and spray with nonstick cooking spray.
In a large bowl, combine the ground beef, panko, green onions, ginger, soy sauce, sriracha, garlic powder, smoked paprika, and salt. Gently mix (I think this is easiest to do with clean hands) until the mixture if fully mixed. Be careful to not overmix, as it will make the meatballs tough.
Form the mixture into meatballs about 1 1/2 tablespoons each. (I like to use a spring loaded scoop, then use lightly wet hands to roll them into a ball.) Place the meatballs on the prepared baking sheet.
Place the meatballs in the oven and cook until browned and cooked through, turning as needed, about 15-18 minutes.
While the meatballs are cooking, prepare the sauce. Combine the mayonnaise, sour cream, sweet chili sauce, and sriracha in a bowl and stir to combine.
6 tablespoons mayonnaise, 2 tablespoons sour cream, 2/3 cup sweet chili sauce, 1 tablespoon sriracha
When the meatballs are done, let them sit for a minute or two, then transfer to a large bowl. Add half of the firecracker sauce and gently stir to combine.
Serve the meatballs over rice, passing the rest of the firecracker sauce for topping. Top each portion with sliced green onion greens and toasted sesame seeds.
