Maraschino cherries, almonds, and coconut were made for each other in these sweet and gooey Coconut Cherry Almond Bars. A buttery crust is topped with a gooey, almost meringue-like filling for a treat any sweet lover will love.

Ingredients
Crust
1cupall-purpose flour
1/4cuppowdered sugar
1/2cupbuttercut into cubes
Filling
2large eggs
1cupsugar
1/3cupall-purpose flour
1teaspoonvanilla
1/2teaspoonbaking powder
1/4teaspoonsalt
1/2cupsliced almonds
1/2cupshredded sweetened coconut
1/2cupmaraschino cherriesdrained and cut into fourths
Instructions
Preheat the oven to 350ºF. Spray a 9x9-inch baking dish with nonstick cooking spray, or line with parchment paper.
In a medium bowl, mix the flour and the powdered sugar. Add the butter and cut into the flour mixture with a fork or a pastry cutter until it resembles fine crumbs.

Press the mixture into the bottom of the prepared baking dish. Bake for 10 minutes.
Meanwhile, in another bowl, lightly beat the eggs. Add the sugar, flour, vanilla extract, baking powder, and salt and mix to combine.

Add the almonds and coconut, then fold in the cherries.

Spread the filling over the crust. Return to the oven to bake until golden brown, about 25-30 minutes.
Cool completely before cutting into bars.
