1 tablespoon olive oil, 1 medium onion, 2 cloves garlic
Add the ground beef and cook until browned and cooked through, breaking it up as it cooks. If needed, drain off any excess fat.
2 pound lean ground beef
Add the chili powder, oregano, cumin, and sugar, then add salt and pepper to taste. Stir in the hot sauce.
2 tablespoons chili powder, 1 teaspoon oregano, 1 teaspoon cumin, 1 teaspoon sugar, Salt and pepper, 2 teaspoons hot sauce
Add the frozen corn, pinto beans, and fire roasted tomatoes. Cook this mixture together for a few minutes, until everything is warmed through.
1 1/2 cups frozen corn, 1 (15.5 oz) can pinto beans, 1 (14.5 oz) can fire roasted tomatoes
While the chili is cooking, combine the cornmeal, flour, baking powder, salt, and baking soda in a large bowl.
1 cup cornmeal, 1 cup all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, 1/4 teaspoon baking soda
In another bowl, whisk together the milk, eggs, and melted butter. Stir the wet ingredients into the dry ingredients, just until combined. Fold in the cheddar cheese.
1 cup milk, 2 large eggs, 1/2 cup butter, 1 cup shredded cheddar cheese
Drop the cornbread mixture over the top of the chili. Spread to cover the top.
Bake in the preheated oven until the cornbread topping is baked through and the top is golden brown, about 25 minutes.
Let cool for a few minutes before serving with your favorite toppings.
Notes
We like to top the casserole with sour cream, jalapeños, and cilantro. You could also add more cheese, green onions, or diced avocado.Nutrition information provided as an estimate only. Various brands and products can change the counts. Any nutritional information should be used as a general guide.
