Fast and easy, this Grilled Salmon with Hazelnut Butter makes it seem like you spent lots of time on dinner. It's packed with flavor and gets rave reviews every time.

Ingredients
1poundsalmon
1/2tsalt
1/8tpepper
2Tfinely chopped hazelnuts
3Tbuttersoftened
1Tchopped fresh parsley
1tlemon juice
Instructions
Prepare hazelnut butter – toast hazelnuts in the microwave or oven. Mix hazelnuts with butter, parsley, and lemon juice.
Sprinkle both sides of fish with salt and pepper. Grill fish for 4 minutes. Turn – spread about 1 T hazelnut butter over each fillet. Cover and grill 4 to 6 minutes longer or until fish flakes easily with fork.
Notes
I didn’t grill my fish – I just broiled it in the oven. It takes about the same amount of time, but you don’t have to heat up the grill. I think that grilling this would be wonderful, too, though. I also didn’t measure the ingredients for the hazelnut butter, just kind of threw it all together. I know I added more that 1 teaspoon of lemon juice, but I love lemon on my fish so it was wonderful. I just buy the frozen salmon fillets at Costco – unfortunately, I can’t get any really good fresh fish around here. (This is one of the many reasons I want to move to Seattle!!) I served my fish with some fresh asparagus that I just quickly blanched in boiling water, and put some of the extra hazelnut butter on the asparagus. It was a very simple, fast meal. The hazelnut butter was perfect – you were still able to get the wonderful taste of the salmon, but the nuts added a nice crunch. This one is definitely recommended!
