Keep breakfast or after-school snacking fun with these Yogurt Pancake Bites! Silver dollar pancakes are topped with yogurt and assorted toppings for a treat the whole family will love. Make the pancakes ahead of time to make it even easier!
- 1 3/4 cups all-purpose flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 1/2 cups milk
- 3 tablespoons vegetable oil
- 2 eggs, separated
- Assorted Yoplait Original yogurt
- desired toppings: berries, bananas, chocolate chips, chopped nuts, coconut, granola, etc.
To make the pancakes: In a large bowl, combine the flour, sugar, baking powder and salt.
In another bowl (or in a large liquid measuring cup) combine the milk, vegetable oil and egg yolks. Whisk with a fork to combine and break the yolks.
In another bowl, whip the egg whites until stiff peaks form.
Pour the liquid into the dry ingredients and stir just until combined. The mixture will have lumps. Add about 1/4 of the egg whites to the mixture and stir to combine. Add the remaining egg whites and fold in gently.
Preheat a large skillet or griddle. Grease as needed.
Drop the pancake batter onto the griddle to make silver dollar sized pancakes, about 1/8 cup of batter each. Let the pancakes cook until bubbles form, then flip and continue to cook until browned and cooked through.
To serve: Place each of the toppings in a bowl. Let each person take a few pancakes and top with a dollop of yogurt, then the desired toppings.
