Tex-Mex Appetizer Tart

Description

Cheese, roasted red peppers and green chile fill a flaky pie crust for this crowd-pleasing appetizer.

Ingredients

  • 1 (10 to 11-inch) pie crust
  • 1 1/2 cups shredded colby jack cheese
  • 1/2 cup roasted red peppers, chopped
  • 1/2 cup mayonnaise
  • 1 can (4-oz) diced green chiles
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chile powder
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 375.
  2. Lay the pie crust on an ungreased baking sheet.
  3. In a medium bowl, combine the cheese, red peppers, mayonnaise, green chiles, cumin and chile powder. Spread the mixture on the pie crust, up to 1-inch of the edges. Fold the edges of the pie up over the filling, forming a 1-inch border.
  4. Bake until the crust is golden brown, about 25 minutes. Remove from the oven and top with the cilantro. Let sit 10 minutes before cutting into wedges to serve.
