Description

All of your favorite taco flavors, in salad form! This Taco Salad is a taco lovers favorite, and it an easy weeknight meal. It’s also great to set out buffet style so everyone can top their salad with their own favorites!

Ingredients

  • 1 tablespoon olive oil
  • 2 1/2 lbs lean ground beef
  • 2 tablespoons taco seasoning
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • Salt and pepper
  • 1/4 cup water
  • 3 romaine hearts, washed and chopped
  • 12 oz. tortilla chips
  • 8 oz Colby jack cheese, shredded
  • 1/2 red onion, halved and sliced
  • 3 medium tomatoes, diced
  • 1 1/2 cups chipotle ranch dressing
  • Optional toppings: diced avocado, cilantro, lime wedges, sour cream, etc.

Instructions

  1. Heat the olive oil in a large skillet pan over medium heat.
  2. Add the ground beef and cook until browned, breaking it up as it cooks, about 10 minutes.
  3. Season the beef with the taco seasoning, chili powder, and cumin. Season to taste with salt and pepper. Add the water and let the mixture cook until thickened, about 5 minutes.
  4. While the meat cooks, prep your salad ingredients.
  5. To assemble the salads, fill a bowl with some of the lettuce. Crush some of the tortilla chips and place on top. Top with ground beef, cheese, onions, tomatoes, and any other desired toppings. Drizzle with some of the salad dressing.
  6. Serve immediately.
