Nothing hits the spot on a hot summer day like one of these Strawberry Banana Cashew Pops! Only 3 ingredients make up these popsicles that the kids (and adults!) will love.
With summer in full swing, the kids and I have been having fun getting into the kitchen to make up different snacks. About a month ago, we went through a heat wave – with temps in the 100s every day – and started making different ice creams, smoothies and frozen pops to cool down. And since we started, we just can’t stop!!
Along with frozen treats, one of my kids’ favorite snacks is a glass of milk – chocolate for the boys and strawberry for my daughter. I know that it is loaded with sugar, so it’s a rare treat when they get to have it, but boy, do they get excited when they do!
But there is a way to combine their love of frozen treats and milk – with these Strawberry Banana Cashew Pops! But instead of milk, they use Silk Cashewmilk as a creamy, dairy-free substitute, along with a good dose of fruit, all in a frozen popsicle.
These Strawberry Banana Cashew Pops are made with the new vanilla Cashewmilk from Silk. They also have a chocolate version (which my kids also love!), but my daughter was the one helping me the day I made these, and we both decided that we would be on Team Vanilla. (I know my boys would have been Team Chocolate, though!) I love that the Vanilla Cashewmilk has less sugar than sweetened milk, but it’s still sweet enough along with the fruit to not have to add any additional sugar to sweeten the popsicles.
All you need for these pops are some ripe bananas, strawberries and Vanilla Cashewmilk. You blend the bananas and Cashewmilk together, add in the strawberries and freeze. It’s a simple as that!
I have a popsicle mold that I love, but if you don’t have one, you can simply use small disposable paper cups and popsicle sticks. Super easy!
These Strawberry Banana Cashew Pops are the perfect summertime snack for the kids. And believe me – the adults will love them, too!! Such a great (and easy!) idea. I’m obsessed with their cashewmilk. It quickly replaced almond as my favorite once I got my hands on it. 🙂
