Peach and Brie Quesadillas

Description

A delicious appetizer or light dinner, these Peach and Brie Quesadillas are a delicious sweet and savory recipe. They only take minutes to make, and have such a unique flavor.

Ingredients

Sauce:

  • 2 tablespoons honey
  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon freshly grated lime zest

Quesadillas:

  • 1 cup thinly sliced peaches (from about 2 large peaches)
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon light brown sugar
  • 3 oz Brie, thinly sliced
  • 4 (8-inch) flour tortillas

Instructions

  1. Prepare the sauce by whisking together the honey, lime juice, and lime zest. Set aside.
  2. Combine the peaches, chives, and brown sugar in a bowl and toss gently to coat.
  3. Heat a skillet over medium-high heat. Spray with nonstick cooking spray.
  4. Lay 1 tortilla down in the skillet. Top with half of the cheese and half of the peaches. Place another tortilla on top. Cook until the bottom is browned, then gently flip over and cook until the second side is browned. Remove from the skillet to a cutting board.
  5. Repeat with the remaining ingredients.
  6. Cut each quesadilla into wedges and serve with the sauce.
