Description

Change up pizza night by turning your pizza into a pizza pocket!! These Pack-It-In Pizza Pockets are filled with pepperoni, mushrooms and cheese, and pack a ton of flavor!

Ingredients

  • 1 lb pizza dough
  • 3 tablespoons extra virgin olive oil
  • 8 oz crimini mushrooms, sliced
  • 4 oz sliced pepperoni
  • 8 oz shredded mozzarella cheese
  • 8 slices provolone cheese
  • 2 tablespoons finely grated parmesan cheese
  • marinara sauce, for serving

Instructions

Lightly flour a work surface.  Cut the pizza dough into 4 equal portions.  Cover with a kitchen towel and allow to rest for 20 minutes.

Preheat the oven to 400ºF.  Line a large baking sheet with a sheet of parchment paper.

Meanwhile, heat 2 tablespoons of the oil in a large skillet over medium-high heat.  Add the mushrooms and cook until browned.  Season with salt and pepper and set aside.

Working with one piece of dough at a time, roll the dough into a 7×8-inch rectangle.  Layer 1/4 of the pepperoni down the center of the dough, length-wise.  Top with 1/4 of the mushrooms, 1/4 of the mozzarella cheese, then 2 slices of provolone, folding the cheese in half if needed.

Starting with one long side of the dough, fold it over the top of the filling.  Take the other long side and fold it up to meet the other side; pinch to seal the sides together. Fold in the edges and pinch to seal.  Transfer, seam side down, to the prepared baking sheet.  Repeat with the remaining dough and filling.

Brush the tops of the pockets with the remaining 1 tablespoon of olive oil.  Sprinkle the parmesan cheese evenly over the tops.

Bake in the preheated oven until browned, about 20 minutes.  Remove from the oven and let sit for 10-20 minutes before serving.  Serve with marinara sauce for dipping.
