Baked cookies with oatmeal and toffee

Step up your oatmeal cookies with this version that includes coconut and toffee. These Oatmeal Toffee Cookies are the perfect family friendly cookies.



  • 1/2 c butter
  • 1/2 c shortening
  • 2 eggs
  • 2 c packed light brown sugar
  • 2 t vanilla
  • 1 3/4 c all-purpose flour
  • 1 t baking soda
  • 1 t ground cinnamon
  • 1/2 t salt
  • 3 c quick cooking oats
  • 8 oz pkg of toffee bits
  • 1 c sweetened coconut flakes


  1. Heat oven to 350F. Lightly grease cookie sheet.
  2. Beat butter, eggs, brown sugar and vanilla in a large bowl until well blended.
  3. Add flour, baking soda, cinnamon and salt; beat until blended.
  4. Stir in oats, toffee bits and coconut.
  5. Drop dough by rounded teaspoons about 2 inches apart onto prepared sheet.
  6. Bake 6 to 8 minutes or until edges are lightly browned.
  7. Cool 1 minute; remove to wire rack.
