A family favorites – these Oatmeal Scotchies are filled with oats and butterscotch chips and are soft and chewy.
We’ve all got back to school on the brain, right? We have one week of summer fun left – but let’s be honest, this next week is going to be spent getting ready and back on a schedule. Let’s just say our bedtime routine was completely thrown to the wind this summer, so we have some serious re-training to do.
But once school starts, it’s time to start thinking about lunches and after school snacks, and these Oatmeal Scotchies are a definite favorite. I actually first published this recipe on August 19, 2009. Actually, I posted it on the now extinct Cafe Zupas blog, so my link to that post no longer worked. So I actually re-photographed these cookies almost 3 years ago, but these new photos were lost in the depths of my hard drive. But I found them again just in time for back to school this year!
These Oatmeal Scotchies are made for butterscotch lovers – which includes me! The oats give them a fantastic, hearty texture, and the butterscotch chips bring in that delicious butterscotch flavor. I love a good chocolate chip cookie, but sometimes you need something a little different and these Oatmeal Scotchies are your answer. Soft and chewy – kind of my favorite kind of cookie. 🙂
I may be sad to leave behind our carefree summer, but I’ll gladly welcome in all the back to school cookies. These Oatmeal Scotchies definitely need to be in your after school cookie routine!

Oatmeal Scotchies
Ingredients
- 1/2 cup butter softened
- 1/2 cup shortening
- 2 teaspoons vanilla
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon cloves
- 2 cups all-purpose flour
- 2 cups old fashioned oats
- 1 3/4 cups butterscotch chips
Instructions
- Preheat oven to 375ºF.
- Cream shortening and butter with vanilla until smooth. Add both of the sugars and cream until smooth. Add eggs and beat well. Add baking powder, baking soda, salt and spices. Mix well. Add flour a little at a time. Mix in oats and butterscotch chips. Drop by tablespoon sized balls onto baking sheet.
- Bake for 8 to 10 minutes, or until golden brown.

What a beauty this recipe I’m looking for even some oatmeal recipes since I have to eat a lot of this food because of health problems, so it is very good to vary the recipes so as not to become tiring.
