Description
Perfect every time, these microwave caramels couldn’t get much easier! A few minutes of hands on time and you have caramel candy that tastes like you bought it at a fancy candy store.
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup light corn syrup
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup sweetened condensed milk
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
Instructions
- Butter an 8×8-inch baking dish or line with parchment paper.
- Place the butter in a large bowl. Microwave until melted.
- Add the corn syrup, sugar, brown sugar, sweetened condensed milk, and salt to the butter. Stir to combine.
- Return to the microwave and cook on high for 5 1/2 to 6 1/2 minutes*.
- Remove carefully (the bowl will be hot so use hot pads) and stir in the vanilla. Pour the mixture into the prepared pan.
- Let the caramel sit until set, then cut into pieces for serving.
Recipe Notes:
*Every microwave will cook a little differently, so you may need to make a few batches until you find what works perfect for your microwave. I have a 1200 watt microwave, and the first time I tried 6 1/2 minutes. The caramels were delicious, but more chewy than soft. My sweet spot is 5 minutes 45 seconds for a soft caramel that still keeps its shape.
