Microwave Caramels

Description

Perfect every time, these microwave caramels couldn’t get much easier! A few minutes of hands on time and you have caramel candy that tastes like you bought it at a fancy candy store.

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup light corn syrup
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup sweetened condensed milk
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Butter an 8×8-inch baking dish or line with parchment paper.
  2. Place the butter in a large bowl. Microwave until melted.
  3. Add the corn syrup, sugar, brown sugar, sweetened condensed milk, and salt to the butter. Stir to combine.
  4. Return to the microwave and cook on high for 5 1/2 to 6 1/2 minutes*.
  5. Remove carefully (the bowl will be hot so use hot pads) and stir in the vanilla. Pour the mixture into the prepared pan.
  6. Let the caramel sit until set, then cut into pieces for serving.

Recipe Notes:

*Every microwave will cook a little differently, so you may need to make a few batches until you find what works perfect for your microwave. I have a 1200 watt microwave, and the first time I tried 6 1/2 minutes. The caramels were delicious, but more chewy than soft. My sweet spot is 5 minutes 45 seconds for a soft caramel that still keeps its shape.
