Maple Bacon Waffles

Description

Waffles are infused with bacon pieces and maple syrup for a twist on a breakfast favorite.

Ingredients

  • 3/4 pound bacon
  • 1 3/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs, slightly beaten
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1/4 cup real maple syrup
  • 1 teaspoon maple extract

Instructions

  1. Preheat a waffle iron.
  2. Cut the bacon into small pieces. Cook over medium heat until crisp; remove to a paper towel covered plate.
  3. In a bowl, mix together the flour, sugar, baking powder and salt. Make a well in the center of the mixture. Pour in the eggs, milk, oil, maple syrup and extract and mix just until combined. Fold in the reserved bacon.
  4. Oil the waffle maker, then cook the waffles according to the manufacture’s instructions. Serve with additional maple syrup, if desired.
