Garlic Parmesan Pretzel Crisp Chicken

Description

Chicken breasts are covered with a pretzel coating and served with a cheesy sauce.

Ingredients

  • 2 (8-10-oz) boneless, skinless chicken breasts
  • 1 egg
  • 1/3 cup milk
  • 1 1/4 cups pretzel crumbs from Garlic Parmesan Pretzel Crisps
  • vegetable oil
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • fresh parsley, for garnish
  • 1/2 cup soft garlic and herb cheese

Instructions

  1. Preheat the oven to 225F.
  2. With a sharp knife, butterfly each chicken breast, making a total of 4 thin chicken breasts. Season with salt and pepper.
  3. In a shallow bowl, lightly whisk together the egg adn milk. Place the Pretzel Crisp crumbs in another shallow bowl.
  4. Place about 1/8 inch of oil in the bottom of heavy duty skillet. Heat over medium heat.
  5. Take each chicken piece and dip in the egg mixture. Then dip in the pretzel crumbs, using your hands ot press the crumbs into the chicken if needed. Transfer to the hot pan. Cook the chicken until cooked through, turning once, about 3 or 4 minutes on each side. Transfer the chicken to a sheet pan and place in the oven to keep warm.
  6. In a medium skillet, melt the butter. Whisk in the flour and cook for about 1 minute. Slowly whisk in the milk. Cook until the mixture starts to thicken. Stir in the cheese, then season with salt and pepper.
  7. Serve the chicken with the cheese sauce, and garnish with chopped fresh parsley.
