Corn and Bacon Casserole

An easy corn casserole made with bacon and sour cream.



  • 6 slices bacon
  • 1/2 cup chopped onion
  • 2 tablespoons flour
  • 2 cloves garlic, minced
  • salt and pepper
  • 8 oz sour cream
  • 3 1/2 cups corn (fresh or frozen)
  • 1 tablespoon chopped parsley
  • chopped chives


  1. Preheat the oven to 375F.
  2. Cut the bacon into bite-sized pieces. Cook until crisp; remove with a slotted spoon to a paper towel lined plate.
  3. Add the chopped onion to the bacon drippings and cook until softened. Stir in the flour and the garlic and cook 1-2 minutes. Remove from the heat and season with salt and pepper.
  4. Stir the sour cream into the mixture. Add in the corn, the parsley and half of the reserved bacon. Pour into a 1-quart baking dish and top with the remaining bacon. Bake for 20-25 minutes, or until heated through.
  5. Sprinkle with chopped chives before serving.
