BBQ Chicken and Vegetables {Slow Cooker/Freezer Meal}

This easy slow cooker chicken recipe is perfect as a make-ahead freezer meal. And it’s full of veggies and the homemade bbq sauce gives it tons of flavor.



  • 3 medium sweet potatoes, peeled and cubed
  • 1 large bell pepper, cubed
  • 1 onion, diced
  • 3 lbs boneless, skinless chicken breast, cubed
  • 2 (15 oz) cans tomato sauce
  • 4 tablespoons brown sugar
  • 4 tablespoons worcestershire sauce
  • 2 tablespoons mustard powder
  • 4 cloves minced garlic
  • fresh cilantro, for serving
  • prepared rice, for serving


  1. In a large bowl, combine all ingredients and mix well. Transfer to 2-4 freezer safe bags, label and freeze.
  2. When time to cook, dump contents of one bag into a slow cooker and cook on low for 6-8 hours. If not frozen, reduce cook time by 1-2 hours. Top with chopped cilantro and serve over rice.
