The perfect breakfast for dinner recipe, this Poblano Chile Scramble has eggs and potatoes cooked with freshly roasted chiles. A great taste of the southwest! Plus a review of Good Cheap Eats by Jessica Fisher.
I was talking to a couple of girls the other day about my job. I honestly have the coolest job, but I was saying that one of the biggest downfalls is the grocery bill. I’m not even kidding you – it’s a bit out of control. You know how after you’ve finished checking out, how the checker will tell you how many rewards points you have? (or at least at my store they do!) I can sometimes see that look on the checker’s face – almost a look of awe. I always just answer with, “yeah, I spend a lot on groceries.”
Which is one big reason I was so excited to get a copy of Good Cheap Eats by Jessica Fisher. I can use all the help I can get, and if there is a way to cut back on my grocery bill, I want to take it!! Jessica is pretty much the authority on cutting that grocery bill as the blogger behind the blog with the same name, Good Cheap Eats. In this cookbook, she gives 200 family friendly recipes, plus 100 money saving tips.
The book is laid out in menu plans, each menu feeding a family of 4 for $10 or less. I’m always terrible at deciding what goes well with what, so I love the menu plans. And I also love that it’s easy to switch things around to create your own menu plans. And yes – some of those menus even include dessert in that amount!!
Here are the details:
Number of Photos: some. There are not a ton of photos in this book, but enough to keep you interested.
Difficulty Level of Recipes: easy to medium. These are made to be every night recipes, and for the most part are very easy recipes. There are some baking recipes – breads and desserts, which are the only recipes that I think would fall into the medium category.
Availability of Ingredients: easy. I think one of the purposes of this book is to make grocery shopping easier, so you should be able to find everything at your local grocery store.
I jumped right into this cookbook, and actually went crazy right off the bat, and didn’t stop with just one recipe! So here’s what I made!
Pineapple Chicken
I have already been grilling like crazy this year, and when I saw this Pineapple Chicken recipe, I knew I wanted to try it. The texture of this chicken was phenomenal. The marinade really tenderized the chicken and did something magic to it. I had my chicken over rice and thought it was absolutely perfect. My husband isn’t a rice fan, so he had his plain, and though it was a little salty without the rice. But eat it with the rice and you’ll want to make it over and over again!
Poblano Chile Scramble (recipe below)
As a New Mexico girl, I knew I needed to make this recipe the minute I saw it. We love breakfast for dinner, and this Poblano Chile Scramble is the perfect breakfast for dinner recipe. I had no complaints about this one at all! I only added the chiles to half of the scramble because I didn’t think my kids would eat it with the chiles, but that was pretty easy to do. I could eat this weekly and be happy!
Chocolate Pear Scones
These scones were listed on the menu plan with the Poblano Chile Scramble, so I thought – why not? Now, we have waffles or pancakes for dinner sometimes, but it really threw my kids off to give them scones with their dinner for some reason. I couldn’t stop laughing because they were so confused!! I loved the sweetness that the pears brought. The pear flavor wasn’t very strong, but it was subtly there. I did have to add quite a bit more flour than the recipe called for, so my scones were a bit misshappen in the end, but they were still tender and delicious.
Overall thoughts:
I can definitely see that I will get a lot of use out of this book. There is a wide variety of recipes, and the menu plans will be a definite time saver for me!!
Other recipes I want to try:
Zesty Baked Shrimp with Panko
Grilled Spinach-Pesto Pizza
Lemon-Blueberry Crumble
Garlic-Herb Soft Pretzels
Asian Chicken Salad with Rice Noodles

Poblano Chile Scramble
Ingredients
- 1 poblano or pasilla chile
- 1 tablespoon olive oil
- 2 medium potatoes peeled and cut into a 1/2-inch dice
- 1/2 cup chopped onion
- 8 large eggs beaten
- 1/2 cup shredded cheddar cheese
- cilantro optional
Instructions
- Preheat the broiler. Rinse the pepper and poke a hole at the ed of the pepper. Lay it on a baking sheet and broiler, turning every couple minutes, until all sides of the chill are charred, about 10 minutes. Transfer the chile to a paper bag and seal, or transfer to a bowl and cover the bowl with plastic wrap. Let the chile sit, covered, until cooled. Loosen the skin and pull off, then remove the stem and the seeds. Cut the chile into a small dice.
- Heat the oil in a large skillet with a lid over medium heat. Add the potatoes and toss to coat them in the oil. Cover the skillet and cook, stirring occasionally, until the potatoes are tender, about 15 minutes.
- Add the onion to the skillet and continue to cook until translucent, 5-7 minutes. Stir in the chopped chile.
- Pour the eggs into the skillet and cook, stirring, until the eggs are set, 5-7 minutes. Add the cheese and continue to cook until the cheese is melted. Season to taste with salt and pepper, and serve topped with cilantro, if desired.

Girl, let’s not even talk about grocery bills…mine are astronomical, especially this month since I’m trying to jam two months’ worth of cooking into one as I prepare for my honeymoon. Yikes. I need more cookbooks like this in my life!

This is one of my favorite meals — and you did a great job making it look pretty. Scrambled eggs are so hard that way! Thanks for sharing my book!
