A copycat of Olive Garden’s famous soup, this soup is filled with vegetables, chicken and potato gnocchi, all in a creamy, flavorful and comforting soup.
In my dream world, I would be the ultimate organized person. Think Bree Van de Kamp from Desperate Housewives.
But in real life, it’s not so, much to my disappointment. Not that I don’t try. I think there are just not enough hours in the day, and things don’t always go like planned.
Last month, I sat down and made a calendar. I had a bunch of recipes stocked up (from doing 24 days of Christmas – that left me with a lot of dinners I made throughout the month to post about!). I had a few spots left open for a few various things. And desserts fell into that category.
I mentioned in my newsletter this past weekend that I haven’t baked anything since about Christmas. Not because I made some grand New Year’s resolution, but because I think I was burnt out on sweets.
On the calendar, I had today open for a new dessert recipe. And if you haven’t noticed, this is far from dessert. After a failed attempt this weekend, I decided I didn’t have the energy (or motivation) to try again, so instead you are getting soup. Which really, is a lot more useful this time of year, right? (Although we can never have too many dessert recipes in my opinion. :)) All of my organizing went out the window. But at least I tried, right??
This soup is supposedly a knock off of the Chicken and Gnocchi Soup from Olive Garden. Except to be honest, I have tried their soup. But I’ve been eyeing a few versions of this soup for quite some time now, and I just couldn’t put it off any longer.
I wish I would have made this sooner. This just very well make it into my group of favorite soups. My husband really liked it as well. In fact, he told me that I’d better make it again. Soon. He knows that often, he’ll say that he wants something made again, and I won’t – at least for quite some time. But he begged me to add this to the menu plan right away.
So if you are shivering in the cold like I am, this is the perfect soup to warm you up from the inside out. You won’t regret making this!!

- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced carrots
- 2 cloves of garlic, minced
- 1 teaspoon fresh thyme
- salt and pepper
- ¼ cup all-purpose flour
- 2 cups chicken broth
- 4 cups half and half
- 2 cups cooked chicken, cubed or shredded
- 1 pound gnocchi, prepared according to package directions
- 2-3 cups baby spinach, roughly chopped
- In a Dutch oven or heavy bottomed pot, heat the butter and olive oil over medium heat. Add in the onions, celery, carrots, garlic and thyme and cook until softened, 5-10 minutes. Season with salt and pepper.
- Stir in the flour and cook for a couple of minutes. Slowly whisk in the chicken broth, followed by the half and half. Stir in the chicken. Bring to a simmer and cook for 20 minutes.
- Add in the prepared gnocchi and spinach. Cook until the spinach has wilted.
