Can I tell you how happy I am to have today’s Blogger Spotlight here? If you don’t know Emily from Is This Really My Life, you should remedy that asap. What can I say about Emily? I am lucky to know her in real life, and she is seriously one of the sweetest, funniest and most genuine people out there. She’s one of those people that you just feel lucky to know. And did I say understanding? I originally told her this spotlight would go up a few weeks ago, but because of other things and getting sick, I am just now featuring her. I am a wife and mother of four who enjoys sunset walks through Anthropologie, candlelight dinners with girlfriends and any movie that will keep my kids entranced for hours on end. I love writing, reading, shopping, cooking, eating, exercising and an ice-cold Diet Coke when necessary. Oh, I almost forgot…I love motherhood too. (By the way, caffeine helps with that last one.)


What inspired you to first start writing your blog?
I first started my blog back when I had my t-shirt business. I had heard it was good for businesses to have blogs and I loved writing, so I thought it would be the perfect fit. When we closed up shop, I didn’t want to stop blogging so I came up with a new site name, URL and design…and I haven’t looked back!

What kinds of posts are your favorite to write? What do your readers seem to like the most?

That’s a great question. I do so love food and enjoy sharing my favorite recipes with my readers. One of my most popular recipes is for salted caramel Rolo cookies. And I totally agree. Those babies are to die for! Along with the (often decadent) recipe posts, I love writing personal stories. One of my most popular ones was about suffering from FOMO—it seemed to really strike a chord with my blogging friends.

Where do most of your recipes come from?
I wish I could say I made them up, but the closest I come to creating anything from scratch is tweaking someone else’s recipe. Most of mine are either family favorites or ones I’ve tasted tested during our annual neighborhood progressive dinner and bake-off. Gosh, I love taste testing…

Do you plan a weekly menu? If so, what inspires your menu?
We do have certain theme nights. Tuesday is always Taco Tuesday (Mexican-inspired dishes); Wednesday is Waffle Wednesday (breakfast for dinner, aka “brinner”); and Thursday is Thursketti (Italian-inspired meals). Friday or Saturday is often pizza night and the remaining ones are “fend for yourself” meals.

What is your favorite kind of food to make?
Dessert, especially cookies or brownies. Always.

What is your favorite kitchen tool/appliance?
I’m pretty sure it’s my set of scoops from Pampered Chef. I use the medium and large scoops all the time. They’re perfect for cookies and muffins/cupcakes. LOVE them!

What is your best tip for getting dinner on the table?
Invest in a good slow cooker. The end.

What is your most used cookbook?
Pinterest and AllRecipes.com (sad but true)

What would you eat as your last supper?
Whatever was touted as the best burger in the entire world with a side of steak fries and ranch dressing in which to dip them. I’d have an ice cold Route 44 Diet Coke with vanilla from Sonic (hello…pebble ice, people) as my beverage, and then I’d follow it with a super decadent something. I’d have to wait and decide on that dessert because you never know what’s going to sound good.

What was the first dish you ever cooked?
Do chocolate chip cookies count? Because that was probably it!

Is there a dish that you are known for?

I’m known for my dinner rolls, Cajun chicken pasta, chocolate brownie trifle and peanut butter swirl brownies. We should probably add salted caramel butter bars to the mix as well.

When you really want to cheat, what do you eat?
Brownies I’ve previously baked, cut and frozen. And I’ll probably eat at least half a pan.

Is there anything you would not ever eat?
Oh, plenty. Anything that tastes like the ocean and anything that can make eye contact.

What is your favorite part about blogging?
The friendships. That’s what makes it all worth it.

What is your best tip to becoming a successful blogger?
Blog what you love and always stay true to yourself.

    Hello!! I just have a question for your Spanish rice recipe..I have used the crockpot and used whole grain long rice in the recipe..it never did become soft to eat..I had it in the crockpot for 11 hrs last night..it is turned on again todfay, and it is still hard rice..What did I do wrong? Love the convenience of this recipe but not sure where I went wrong!! Help!!

      I’m guessing that you need more liquid. I would try adding a bit more water to see if it will soften it up all the way.
