Yep, I’m changing my posting schedule up a little bit – again!! I’ve been doing quite a bit of freelance work lately. And I’m really proud of some of those recipe that I’ve created. So, Thursdays are now going to officially become the day that I point you to recipes that I’ve made from around the web. Some weeks, I may only have my post from the Cafe Zupas blog. Other weeks, I may have more. But I thought it would be better to combine them all here in one post instead of doing a bunch of posts that are just going to lead you other websites to find the recipes. I hope you’ll like some of these, and that you’ll click over to check them out!!
I actually first posted about these sandwiches back in 2007, when this blog was still such a baby. I couldn’t get this sandwich out of my head – with thoughts of all of the leftover hard-boiled eggs we are going to have after the hunt on Sunday. This is seriously a delicious egg salad recipe. One you want on hand if you are going to find yourself wondering what to do with those eggs! Recipe at the Cafe Zupas blog.
I could eat green chiles in pretty much anything. It’s a little bit of an addiction for me. And that is where these little green chile pizza rolls come in. Eat ‘em as an appetizer or snack, or add in some chicken and you have dinner! The recipe (and step by step photos) are over at the Rhodes Blog.
And just as a side note – With 5 years of blogging under my belt, I have posted a lot of recipes. And really, up until about a year or two ago, there are some really bad photos. Which is sad, because some of those recipes really are delicious, and I hate that I don’t want to share them with you again because of the pictures. So I’m going to start updating some of those pictures, if I make one of the recipes again. Like the Egg Salad BLTs above. While you can at least tell what they are in the original picture, the updated photo is so much better. But…I also like to see how far I’ve come in the last 5 years, so I’m not banishing those old photos forever. I’ll stick the old photos at the end of the post. I don’t want to forget where I started – otherwise, I might forget how far I’ve come!

nice! great way to “refresh” those old recipes. I know what you mean, I kind of want to redo a lot of mine but I’ll have to have some time first! that egg salad looks so scrumptious! that gives me a great idea for lunch this weekend with the in-laws!

some of those recipes really are delicious, and I hate that I don’t want to share them with you again because of the pictures <— I can relate 100% to this. It's such a shame, too, because even if I have the guts to repost the pics, they just don't do the recipe justice and I have no idea if people will make it or not. Probably not. Lol

I just made some egg salad this morning since I somehow ended up with 3 dozen eggs in my refrigerator. I am so making this Egg Salad BLT’s for lunch or maybe dinner today. I can totally relate about the photos. I look back at my old photos and ask myself what was I thinking. That is the beauty of photography and it shows how we all develop our work and see where we started and where we are now.
