Trix-y Jack-o-Lantern Cake

I’m not so great at coming up with my own recipes. The last one I tried, I went to 6 different grocery stores until I found some pumpkin, and then the pie that in my head was amazing was not so amazing. In fact, after my husband and I each took a bite of it, the rest went in the garbage. It was that bad.So when General Mills contacted me asking if I’d like to come up with a recipe using one of their Big G cereals, I hesitated. I’m not the most creative person, but it sounded like a fun challenge. So I decided to jump right in. I thought for days and days, trying to come up with an idea. I thought of a few, but then through some searching, I found out that those ideas had already been done. I guess if I would have been the early bird instead of waiting until the deadline, then I would have been the first one to do it! But here I am, the last day to submit. And while my idea does start off with one of Betty Crocker’s recipes, I think I took it to a new level!
We made these super cute Jack-o-Lantern cakes when we were at the Baking with Betty event. I fell in love with them because they are so cute. But my one problem is that I am not the best cake decorator. Just having to put the frosting on gives me anxiety. (One of these days, I really need to take a cake decorating class…) So I thought of the next best thing – covering up the frosting so no one can see how bad your frosting job is!! And what better way to cover something up than with cereal??
All I could find were the swirled Trix cereal, but I actually like the way the end cake looked with them. And I will tell you – although this does take some time to put together, it is SO incredibly easy – anyone can decorate this cake!

Start out by sorting out the Trix cereal. This takes some time, but it’s easy to do while watching your favorite tv show!
To make the cake portion, you will need 2 Betty Crocker cake mixes. Mix up the cake according to the package directions, and bake it in 2 2-quart oven proof round bowls. If you only have one, then just mix up one cake at a time and once it has baked and cooled, cook the 2nd. This can always be done a day ahead of time!The cake that I made is smaller – 2 cake mixes are just too much for our little family! So I just did one cake mix and baked it in a smaller bowl.
Bake the cakes at 325F for about 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
Once the cakes are cool, cut the rounded side of the cake to level it out on the side that the 2 cakes will go together to make the pumpkin shape.
Take 2 containers of Betty Crocker frosting and add orange food coloring to each (or use red and yellow to make orange). Mix completely.
On a cake plate, put one cake down, rounded side down, and spread some of the frosting on the cut side. Place the second cake on top.

Frost the cake completely with the remaining frosting. It doesn’t need to be perfect – that’s the great thing about this cake!!
For the stem of the pumpkin, I used some leftover cake. If you are making a full sized cake, the original recipe calls for a colored ice cream cone, which is totally cute. But if you want it covered with cereal, just a small piece of extra cake does the job. Cover the stem with frosting.
Using the green/yellow Trix, cover the stem and make the leaves. Using the blue/purple Trix, make the eyes, nose and mouth.
Using the orange/yellow Trix, cover the rest of the pumpkin. It’s that easy!! Kids and adults alike will be impressed by this cake!Trix-y Jack-o-Lantern Cake

Using a scrap of cake, form the pumpkin stem. Cover the stem with the frosting.
Using the green/yellow Trix, cover the stem and make the leaves. Using the blue/purple Trix, make the eyes, nose and mouth. Using the orange/yellow Trix, cover the rest of the pumpkin.
Store covered at room temperature.

I'm the same as you. I'm not creative at all and it took me days to think about what to make. I looked everywhere for regular Trix (not swirlicious) and could never find any for the idea I came up with. Looks adorable!

I know it seems like I am blog stalking you tonight, lol, but I wanted say thanks for this great cake idea. My daughter's b-day was in Oct. and she saw this cake and decided that this was what she wanted for her birthday cake. It was very easy and super cute, not as cute as yours because I couldn't find a bowl to cook it in so I used a round cake pan. It was just sitting flat not really 3D effects, but hey she loved it! Thanks for sharing!
