Orange Teriyaki Beef with Noodles
Filed under Main Dishes - BeefApr 8
Today is one of those days when I feel like I have nothing of value to say. So I’m not going to say much! Except that this meal was super easy. It wasn’t quite what I was expecting – I was hoping for more orange flavor – but it was still good. The recipe calls for fine egg noodles, but I couldn’t find them anywhere. I used angel hair spaghetti instead, and it worked just fine! A great, easy one pot meal!Orange Teriyaki Beef with Noodles
from Betty Crocker’s Quick and Easy CookbookServes 4
prep time: 10 minutes
cook time: 15 minutes1 pound beef boneless sirloin, cut into thin strips
1 can (14 1/2 oz.) beef broth
1/4 cup teriyaki stir-fry sauce
2 tablespoons orange marmalade
dash of cayenne pepper
1 1/2 cups snap pea pods
1 1/2 cups uncooked fine egg noodles (3 oz)*Spray 12-inch skillet with cooking spray; heat over medium-high heat. Cook beef in skillet 2 to 4 minutes, stirring occasionally, until brown. Remove beef from skillet; keep warm.
Add broth, stir-fry sauce, marmalade and red pepper to skillet. Heat to boiling. Stir in pea pods and noodles; reduce heat to medium. Cover and cook about 5 minutes or until noodles are tender.
Stir in beef. Cook uncovered 2 to 3 minutes or until sauce is slightly thickened.
*I couldn’t find the fine egg noodles, so I substituted angel hair pasta. It worked!

I feel like every meal doesn't have to be mindblowing stop-the-presses amazing. This looks just plain good. And I'm okay with that.

I have been craving orange beef lately and this looks like a healthier, simpler version. Thanks for posting! (And I hear you on not having much to say lately in posts – spring allergies, perhaps?)
