Beef Foldovers
Filed under Main Dishes - BeefMar 11
I have been so lucky so far. My little 13-month old loves to eat. And she loves to eat everything. Not too long ago, though, she decided that she was over “baby” food. She would barely eat her dinner, but when it came time for mommy and daddy to eat, she wanted to eat everything on our plates. So now, my little girl pretty much eats everything that we do. She’s had chicken enchiladas, egg rolls – she doesn’t turn away anything!! And these beef foldovers – she loved them. I was a little leary, because most things I had read said that a child this age might have a hard time with the texture of ground meats. But she gobbled these right up. And then got excited when I brought the leftovers out the next night for dinner again! They may not be sophisticated, but the kids sure will love them!

Can't wait to try this, sounds delicious. Recently had something similar with barbecue beef, topped with shredded coleslaw, and a taste of white wine vinegar(DeLallo).

On Sunday, when my husband gets back from being on tour, I shall give him these with some veg for tea.
They look scrumptious!

They're really good with cream cheese instead of grated cheese too. Yummy!

Andrew is still touch and go with ground beef, but I don't know how he could possibly resist these! I'm going to give these a shot!

I think it's so great that you're teaching your daughter to eat like an adult now! It will make your life so much simpler later on. how could she not, though, when you're such a good cook!
These look delicious.

Way to go with your daughter! Our sons were the same and obviously you do not make food a huge issue and just serve it. She will always try about anything! Your dish sounds great and I would love to try it! Thanks!

We make a variant of these all the time, filled with cream cheese and chopped up chicken, as it's one of our kids' favorite dishes. This sounds like an interesting way to try something a little different.

Except MY kid, who doesn't eat anything. Esp. meat. STUBBORN.
His parents, however, would chow down!

Yummy! I used your basic filling, substituting ground chicken for the beef. Then, instead of crescent rolls, I used egg roll wrappers and quick fried. Just trying to cut fat/calories where I can and this worked well. Thanks for all of the fun yummies.
