  • Pasta with Sausage & Broccoli

    Is it just me, or does this holiday season seem busier than any other? We are even having a small Christmas this year, but it seems like I am being pulled in 20 different directions. Maybe it’s because last Christmas, I was 8 months pregnant and didn’t really feel like doing anything! I’ve been trying really hard lately to make sure that dinner is on the table every night, but it has been tough a few nights. Thank goodness for meals like this one! Finished in less than 30 minutes – you can’t beat that! And a simple, healthy dinner is just what you need on these busy nights.

    Pasta with Sausage & Broccoli
    adapted from Real Simple September 2009

    Serves 4

    12 ounces rigatoni
    1 tablespoon olive oil
    1 onion, sliced
    6 ounces fully cooked smoked sausage, sliced
    1 small head broccoli, cut into florets
    1/4 cup grated Parmesan

    Cook the pasta according to the package directions.

    Meanwhile, heat the oil in a large skillet over medium-high heat. Cook the onion, stirring often, for 3 minutes. Add the sausage and cook, stirring, until browned, 2 to 3 minutes. Add the broccoli and 1 1/4 cups water and simmer, covered, until the broccoli is tender, 5 to 6 minutes.

    Toss the pasta with the sausage mixture and any remaining liquid and the Parmesan. Serve.

  1. Hey Deborah! Hope you're well. I definitely understand busy and yes, we've been enjoying tasty but easy dinners like this lately, too. We had baked rigatoni last night w/andouille. Interesting coincidence :)

  3. My theory is that is been a depressing time with the economy & all so people are kicking up the holiday season to cheer themselves up.
