    Can I tell you how happy I am to not have kids old enough to be in school right now?? It seems like this is the busiest time of the year for parents of back-to-schoolers. Or maybe it’s just getting back into the groove of things that makes it all seem so busy and hectic. Today, on Facebook, my sister posted this: Brooklyn dance @ 4, Mykenna dance @5, Kyler karate @ 5:30, Kyler soccer game @ 6:30, can you say overscheduled!

    I have to admit – that made me grateful for my simple – only – 1 – child – life. But even with my one child – who has many years until she starts school, some days seem so crazy busy that I don’t even have time to think of what’s for dinner. What to do on those nights? Turn to a recipe like these meatball skewers! So incredibly easy and fast. And perfect for the end of summer nights. And did I mention they are quite tasty as well??

    Sweet-and-Sour Meatball Skewers
    from Food and Family Summer ’09

    Makes 4 servings, 2 kabobs each

    32 frozen fully cooked 1-inch meatballs, thawed (1 lb.)
    1 red pepper, cut into 1-inch squares
    1 green pepper, cut into 1-inch squares
    1/4 cup apricot jam
    1/4 cup barbecue sauce

    Heat grill to medium-high heat. Thread meatballs and peppers alternately onto 8 skewers.

    Microwave jam in a small microwavable bowl on high for 15 seconds. Stir in barbecue sauce; brush half onto kabobs.

    Grill 8 to 10 minutes or until meatballs are heated through, turning occasionally and brushing with remaining jam mixture the last 2 minutes.

  3. Oooo, I like the skewer approach here. The sweet and sourness is unexpected … I was thinking bbq, and was very pleasantly surprised to see sweet and sour!

    I'm all for fast, easy, and tasty! I've got three urchlings and their Fall schedules are starting to ramp up. I try to keep it sane by only allowing 1 activity per child … figures their energy level increases just as mine is decreasing! :-)

  6. i've had the ol' apricot jam/barbecue sauce combination on meatballs before, BUT they weren't on a stick. clearly, that would make them better. :)

  9. LOVE this and bet the kids would as well. I totally get what your sister is going through! I have three of my own (including twin boys) all doing something and one doings several activities. Btw, my youngest is named McKenna as well.

    Deborah,I can certainly relate to your sister.with 4 boys all playing at least one sport each,guitar lessons and boy scouts I can't think straight.Those meatball skewers look amazing.I am definitely going to try them!
