May Cheese of the Month – Goat Cheese

I’ve only had goat cheese once before. It’s one of those things that I tried once and wanted to use more often, but I got stuck back in my “safe” mode and haven’t used it since. So I was thrilled when I found out that this month’s cheese from Ile de France would be goat cheese!
I wanted to do something simple with the cheese that would really made the goat cheese the star, so I picked this simple goat cheese spread to make. It’s a perfect little appetizer when spread on a toasted baguette. And the bonus is that it only takes minutes to make, which makes it perfect if you are scurrying to find an appetizer to take to a Memorial Day get-together today!

Sun-Dried Tomato Goat Cheese Spread
adapted from allrecipes1 cup goat cheese
1/3 cup chopped sun-dried tomatoes in oil, oil drained
3 cloves of garlic, minced
1 handful of parsley, chopped, plus more for garnishCombine the goat cheese, tomatoes, garlic and parsley in a food processor and process until thoroughly combined. Serve on a toasted baguette and top with remaining parsley for garnish.

Only ONCE before!!!!!! You are missing out. Eat more Goat Cheese.
I LOVE it in pastas or salads, let me know if you want some tips.

I love goat cheese! My favorite combo is goat cheese + baguette+ honey+ rosemary + toasted pecans. MMMM!

I’ve yet to “cook” with goat cheese myself. I know I’ve had it in a few salads but can’t remember what it tastes like. I’ll have to give this a try. Thanks for sharing!

oh my goodness, this is good. i had to bring a “cheese and crackers” thing for a local election (us pollworkers have to eat, after all) and made this. my parsley plants in the garden aren’t big enough yet to take a lot of leaves, so i used dried parsley for the spread and a few freshly-picked leaves for garnish. served it with toasted baguette rounds. yum, yum!!!

I love goat cheese, but alas, my husband does not. Which means that I rarely buy it or cook with it which is a shame, as I love the stuff. I’m thinking no harm in making this and keeping it all to myself then right?

Mmm, this spread looks amazing!! I love goat cheese so much. Have you ever had goat cheesecake? Amazing! That tang is such a great vehicle for other foods and desserts. Can’t wait to try out your spread!
