Spinach and Artichoke Tortellini Bake

Towards the end of my pregnancy, I got really lazy. I was just so big and tired, and I didn’t feel like doing anything. I figured that I’d get organized again once the baby came, so I didn’t really care much as my office was becoming a huge, disorganized mess. I should have known better. As tired and big as I was, things really were easier to get done then than they are now with a newborn. Especially a newborn like mine that doesn’t like to get put down. So I have to steal a few minutes here and there, just trying to get the laundry done and the kitchen clean. But I also have a stack of recipes to blog about, and that stack is starting to drive me crazy. So hopefully with my next few posts, I can work through this stack and feel like I’m starting to get organized again!!
This recipe is one that is great for a night when time is running low. And if you are a fan of spinach artichoke dip, this has a lot of the same flavors. That is what originally attracted me to this recipe. Spinach artichoke dip in pasta form?? I’m in!!
Spinach Artichoke Tortellini Bake
from the Rachael Ray ShowServes 6
2 pounds fresh or frozen ricotta-filled tortellini
salt
2 tablespoons butter
2 cloves garlic, finely chopped
2 cups milk
a few grates fresh nutmeg
1 10-ounce box frozen chopped spinach, defrosted and excess water squeezed out
1 13.75 oz can artichoke hearts, or 1 10-ounce box frozen quartered artichoke hearts, defrosted
ground black pepper
1/2 cup shredded Asiago cheese
1/2 cup grated Parmesan
1/2 cup mozzarella cheesePreheat broiler.
Place a large pot of water over high heat to boil. Once boiling, salt the water and drop the pasta in. Cook to al dente according to package directions. Drain cooked pasta and reserve.
While the pasta is working, place a large skillet over medium-high heat with the butter. Cook the garlic in the butter until aromatic, about 1 minute, then sprinkle the flour over the butter and cook for another minute. Whisk the milk into the roux and bring up to a bubble to thicken. Add nutmeg, spinach, artichoke hearts, salt and pepper, and cook until the veggies are heated through.
Add the reserved tortellini to the skillet and toss to coat. Transfer everything to a large casserole dish and sprinkle with the cheeses. Place under the broiler to brown, about a minute.

Debs I remember it well the end of my pregnancy, I felt just the same as you did! I wish I lived next door I would come around and gladly give baby a cuddle for you while you get on with things.
Your Tortellini Bake looks marvellous and I’m salivating just imagining all those wonderful flavours together.

I just bought some tortellini the other day without knowing what I would do with them…it’s meant to be! This sounds fantastic!
As for the baby, do you have a sling or wrap? They make life so much easier sometimes…you can cuddle your little one and get a few things done. But don’t forget to rest when you can too. congratulations!

I’m usually running low on time! This recipe is terrific, and I am a fan of the dip, so I’m sure I’d enjoy this. Hope you are getting some rest with the new one in tow. Isn’t it amazing how time moves once the wee one is on the scene! This was delicious! Not the healthiest of recipes… but I’ll work on that next time. I’m not even sure the artichokes are necessary.

I tried this last night- it was good, but I added in some red pepper flakes and I would have made more sauce, or cut down to 1 or 1.5 lbs of tortellini. It served way more than six!
