Devil’s Food Cupcakes with Fluffy Frosting

I’ve talked about my mom on my blog before. I think she is where I get my love of food from. She made breakfast 6 mornings a week. (On Saturdays, we were allowed to get up early and eat cold cereal while watching cartoons. I think the only reason we were allowed cereal this one day was so that she could have one morning to sleep in!) She cooked every meal. In fact, I don’t ever remember eating out except for when we would go on vacation. It was never – “I’m too tired to cook, so let’s eat out tonight”.Birthdays were always a lot of fun because if it was your birthday, you would get to choose what was for dinner and what kind of cake you wanted. I remember always wanting homemade chicken nuggets for dinner, and the cake of choice was always cherry chip with fluffy frosting. It wasn’t until I started reading food blogs that I found out that most people call this frosting 7 minute frosting or marshmallow frosting, not fluffy frosting! And although it’s been quite awhile since I’ve had a cherry chip cake, fluffy frosting still remains my favorite.
I’ve made a similar cupcake on here before – a devil’s food cupcake with marshmallow frosting. The frosting on my first post was good, but it wasn’t the same as the frosting from my childhood. And this cupcake recipe is much better. I can’t wait until my kids are old enough to love birthdays like I did, and I won’t be surprised if they always choose fluffy frosting for their cakes!
Devil’s Food Cupcakes
adapted from Better Homes and Gardens New Baking Book2 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup butter
1 3/4 cups sugar
1 teaspoon vanilla
3 eggs
1 1/3 cups cold waterLine cupcake tins with cupcake liners. Preheat oven to 350F.
Stir together flour, cocoa powder, baking soda and salt. Set aside.
In a large mixing bowl, beat butter with an electric mixer on medium to high for 30 seconds. Add sugar and vanilla; beat until well combined. Add eggs, 1 at a time, beating well after each. Add flour mixture and water alternately to beaten mixture, beating on low speed after each addition just until combined.
Fill cupcake liners 3/4 full. Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
Fluffy Frosting
1/3 cup corn syrup
1/2 cup sugar
2 egg whites
1 teaspoon vanillaCombine corn syrup and sugar in a small saucepan. Bring to a boil, and boil until sugar is dissolved.
Meanwhile, beat the egg whites until stiff. Add vanilla. When the corn syrup/sugar mixture is ready, pour it in a stream into the egg whites while still beating. Beat until the mixture cools a bit and forms a smooth, marshmallow frosting.

I definitely need to experiment with more cupcake recipes. I never think to make them, but I do love how they turn out… all cute with the swirly frosting and everything. Yours are pretty

Deb what a lovely read and my mum was always the same, she always cooked and I don’t remember us having take-outs and the few times we had Mc Donalds it was a really big treat!
These cupcakes look really delish and the frosting is so fluffy!

My mum used to do the same thing on birthdays for us too and I still carry it on with my kids. It’s such a cool tradition. For the life of me, I cannot remember what I used to choose tho.

Wow! What a mom! I really admire her for making breakfast every morning but Saturdays; I’m the other way around, I only make breakfasts on Saturdays

We never ate out in my house either. When I was really young it was almost always my Mom who cooked but then it switched somewhere along the lines and Dad made all our meals. Baking was never a Dad thing though so Mom made birthday cakes. Mine was always black forest with whipped cream.

A wonderful post Deb and brings back memories for me as a child. My mum would cook fresh produce every day and bake at least twice a week.
