  • Cupcakes with Orange Cream Cheese Frosting

    I’m back! Well, physically I am, but I think I left part of myself back in New York. It’s always hard to come home from a great vacation, but then it’s always great to sleep in your own bed again.

    I’ll tell more about our trip later, but I wanted to make sure to get my post up to submit to Tartelette and Sugar High Friday. When I saw that she was hosting and that the theme was “Citrus” I knew I was going to participate. I think that citrus would have to be my favorite these days. I hate to admit this, but these days, I would probably choose something citrus over something chocolate. I know – I must be losing my mind! But there is just something so bright and refreshing about citrus flavors that they make my mouth water every time.

    These cupcakes come from a book called Small-Batch Baking by Debby Maugans Nakos. I am falling in love with this book. It’s made just for households like mine, where there are only 2 people. One batch of these cupcakes makes only 4 cupcakes – perfect!! I made the basic cupcake recipe and an orange cream cheese frosting. The only complaint I can come up with about this recipe is that the cupcakes were a little bit dense. I think it’s because there is so little batter that I didn’t want to use a mixer, and I probably just did not whip in enough air by hand. But they were still delicious, and this frosting is absolutely delicious. And although they are so good that you would be tempted to over-eat, you can’t – because there are only 4 of them!!

    Just Plain Good Cupcakes
    from Small-Batch Baking

    Makes 4 cupcakes

    2 tablespoons unsalted butter, at room temperature
    1/2 cup all-purpose flour
    1/4 cup buttermilk
    1/8 teaspoon baking soda
    Yolk of 1 large egg, at room temperature
    1/2 teaspoon pure vanilla extract
    1/4 cup plus 2 tablespoons sugar
    1/8 teaspoon salt

    Preheat the oven to 350F and place the rack in the middle of the oven. Line 4 muffin cups and set aside.

    Combine the buttermilk and baking soda in a small bowl and stir to mix. Gently whisk in the egg yolk and vanilla.

    Place the flour, sugar and salt in a medium-sized mixing bowl ad whisk to blend well. Add the butter and half of the buttermilk mixture. Beat with a hand-held mixer on low speed until the dry ingredients are moistened. Increase the speed to medium and bet until the mixture is lightened and has slightly increased in volume, about 45 seconds. Scrape down the sides of the bowl. Pour in the remaining buttermilk mixture and beat on medium speed until well blended, 20 seconds. Scrape down the sides of the bowl.

    Spoon the batter evenly into the 4 prepared cups. Fill the empty cups halfway with water to prevent them from scorching. Bake the cupcakes until a tester comes out clean, about 20 to 23 minutes.

    Remove from the oven and allow to cool in the pan for 10 minutes before removing and allowing to cool completely.

    Orange Cream Cheese Frosting
    adapted from Small-Batch Baking

    Makes 1 cup

    4 ounces cold cream cheese
    2 tablespoons unsalted butter, at room temperature
    3/4 cup confectioners’ sugar
    1 teaspoon grated orange zest
    1/2 teaspoon orange extract
    1 tablespoon thawed frozen orange juice concentrate

    Place the cream cheese and butter in a medium mixing bowl and beat on medium speed until blended, about 20 seconds. Add the sugar, orange zest and extract, and beat to mix. Add the orange juice concentrate and beat until fluffy, about 1 minute.

    I love the whole small batch idea, especially when experimenting…so if something goes awry, I haven’t wasted good ingredients…but this recipe certainly doesn’t go awry…it’s perfect and I agree about citrus!

    Small batch baking is such a good idea when there are only two or three at home. The freezer can only hold so much after all :)

  40. These remind me of those old Hostess cupcakes that were orange flavored that I LOVED when I was a kid. Obviously these look so much better…I feel nostalgic and feel the need to make these.
